Zucchini Fritters


  • ½ cup quinoa (cooked and cooled)
  • 1/2 cup corn (cooked from frozen or canned)
  • 1 cup water
  • 1/4 – 1/2 cup wholemeal flour
  • 1/4 cup fresh basil
  • 2 tablespoons extra virgin olive oil
  • 5 eggs
  • 2¼ cups zucchini, grated
  • ¾ cup haloumi, grated


  1. Place the quinoa, zucchini, haloumi, corn, eggs, basil into a large bowl. Stir to combine and add enough wholemeal flour to make the mixture not runny
  2. Heat oil in a large fry pan over medium heat. Use a tablespoon to add the zucchini mixture – you can put about 4 fritters in a pan (depending on the size of your pan). Don’t overcrowd the pan, otherwise its hard to flip
  3. Cook for 3 minutes each side or until cooked through and golden
  4. Remove from the fry pan and cover to keep warm
  5. Add more oil and repeat with the remaining mixture
