Beef and Cashew Simmer

Serves 4
 
Ingredients
  • 800g Beef
  • 4 tablespoons olive oil or coconut oil
  • 1 medium onion, diced
  • 1 large clove garlic, crushed
  • 2 teaspoons dried or fresh oregano
  • 250g thickened cream
  • 40g butter
  • 1 cup chicken stock
  • 200g of salted cashew nuts
  • 200g button mushrooms, cut in half
  • Moroccan and/or Tuscan Seasoning
  • Salt and freshly ground pepper to taste
  • 1 cup freshly chopped flat leaf parsley
  • A handful of fresh basil
  • Paprika (optional)
  • Sriracha Sauce (optional)
  • Saffron (optional)
  • Lemon to serve and sesame seeds
 
Method
  1. Prepare rice according to packet instructions.
  2. Chop beef into 3cm pieces.
  3. Heat 3 tablespoons oil in a large frying pan until hot, add beef and brown both sides. Remove from heat and put to one side.
  4. Lower heat, fry onion, garlic and oregano, stirring occasionally for 3-4 minutes until onions soften.
  5. Add cream, stock and butter, stir until sauce boils, return beef, cover and simmer until cream sauce thickens.
  6. Add Moroccan and/or Tuscan Seasoning plus paprika to taste.
  7.  Toss in parsley, adding some extra oil to moisten.
  8.  Heat remaining oil or coconut oil in a medium pan. Stir-fry mushrooms & cashew nuts, over high heat for 2-3 minutes until lightly browned. Spoon over beef.
  9. Season with salt, pepper, siracha and lemon to taste.
  10. Garnish with Basil. 
  11. Serve over white rice.
