Caper chicken

Serves 4

4 Chicken Breasts (skinless, boneless with fat trimmed)
3 Tbsp Dijon Mustard
¼ cup fine dry breadcrumbs
1 lemon (juiced)
1 Tbsp capers
Olive Oil or Coconut Oil
  1. Flatten out chicken breast with a mallet and cut each breast into half.
  2. Coat chicken pieces with mustard and season with salt and pepper.
  3. Lightly crumb chicken with breadcrumbs and cook in a pan until lightly golden brown and chicken is cooked. Add lemon juice and capers to a pan and heat through. Drizzle juice onto chicken. Serve with lemon wedges, salad or vegetables.
