Heirloom Tomato Salad

Serves 2 
GF, Refined sugar-free 
6 heirloom tomatoes, sliced  
1/4 cup walnuts, roughly chopped  
1/4 cup red onion, sliced  
1/2 bunch basil leaves  
1 burrata  
2 tablespoons extra-virgin olive oil  
1/4 teaspoon black pepper  
1/4 teaspoon Himalayan salt  
1. Place all tomatoes on a plate in a single layer.  
2. Sprinkle chopped walnuts evenly around the plate.  
3. Tuck in fresh basil leaves and red onion. 
4. Drain burrata and place it in the centre of the plate.  
5. Drizzle olive oil and season
